The Valpolicella Ripasso Doc Classico Superiore by Le Bignele is a structured and fruity wine, embodying the essence of the Valpolicella region with its brilliant, intense ruby red color that almost shades into garnet. Made from local grapes, this wine undergoes a double fermentation process on Amarone’s dried skins, enhancing its ripe and juicy red fruit aromas with woody and spicy notes from barrel aging.
On the palate, it offers a full-bodied, persistent, yet balanced and elegant mouthfeel, akin to soft velvet. Ideal pairings include grilled or roasted red meats, game, black truffles, and medium-aged cheeses. This wine, crafted from Corvina, Corvinone, Rondinella, and Molinara grapes, is produced in Marano di Valpolicella, an area known for its clay and limestone soil at an altitude of 300 meters above sea level. The vines, aged between 15 and 30 years, are grown using the Pergola Veronese system, with a yield of 100 quintals per hectare, of which 60 are selected.
Harvested exclusively by hand from late September to mid-October, the wine undergoes controlled fermentation in stainless steel tanks before being transferred to the fresh Amarone pomace. It is then aged in 25 and 38-hectoliter oak barrels for a minimum of 18 months. The result is an organoleptic profile characterized by an intense ruby red color, tending towards garnet, and a complex bouquet of juicy, ripe red fruits and nuanced woody and spicy notes, especially black pepper.
