Average age of the vines: 40 years.
The plot is located on the southern slopes of Burgundy, with a magnificent exposure which ensures a good evolution of the grapes.
Yield: 6000 vines per hectare for an average production of 50 hectoliters per hectare.
Vinification:
Traditional vinification between 15 and 21 days. Cold maceration. Aged in barrels for 11 months (blend of new 50% barrels and wine barrels). All the wines are aged in temperature-controlled cellars.
Food pairing: Excellent with all meats and soft cheeses.
Ideal serving temperature: 16 – 18 °C.
