Harvested by hand. The maceration lasted 15 days with a grid system allowing a gentle and slow infusion of the grappes which gradually give the juice their color and structure. After pressing, the juice were aged in concrete vats for 7 months at low temperature in order to best preserve the natural fruitiness of the grappes. They carried out a natural malolactic fermentation. They have not been glued and have undergone a very light filtration.
Tasting Notes:
Color: purple robe, with purplish reflections
Nose: clean and expressive, with notes of white flowers and crushed strawberries then are added peppery and peony notes, characteristics of our terroirs
Mouth: ample attack, with an expression of aromas mixed with black cherries and some fresh of blackberries. The finish, slightly tannic, offers a good persistence of the fruit
Service temperature: 12 to 15°
Food Match: grilled red meat, white meats
