Origins:
- Grape variety: 100% Chardonnay
- Soil: calcareous brown and argilo-calcareous earth
Vinification: The grapes are harvested by hand and are sorted directly on the vine. They are pressed immediately and carefully with no excessive compaction. After being allowed to settle for 12 to 18 hours, the musts are put into vats and casks for alcoholic formation without yeast cells.. The alcoholic fermentation temperature is kept at 18 tot 20 °C.
Elevage (“nurturing” the wine): All our wines go through their malolactic fermentation during élevage. So as to preserve the delicacy of the aromas, our wines are partly matured in oak casks. The elaboration of the Domaine’s wine-making process combines Burgundy tradition with the science of modern oenology. The vinification method remains traditional.
Gustatory Characteristics: The wine offers a delicate gold nuance with green reflections. The bouquet combines fruity notes of white flowers. The initial contact is straightforward with an acidity balanced by richness and roundness. The finish is long and fruity.
Gastronomy: Serve at between 10 and 12°C. Accompanies an apéritif with savoury cheese pastries. It enhances most entrées, shellfish, fish, poultry and fresh goat’s cheeses.
A WORD FROM THE WINE-GROWER: “The last plot of land acquired, purchased in 2003 when I settled here. Situated on the Plateau de Rully. A selection of 30-year-old vines planted in argilo-calcareous soil.”
